LLM gateway for PII
Sits in front of ChatGPT-style APIs. It strips SSN, email, and phone before the cloud sees them, checks policy on a local model, and only searches internal docs when it needs to.

We use AI to draft and wire things faster. People still own the rules: what a model is allowed to see, when to reorder, how a shift works, and how a recipe is written. What matters lives in the repo, not in a chat log.
